Breakfast has never been my thing. For years, I would have 4-5 cups of coffee for breakfast and that was it. I just don’t feel much like eating first thing in the morning. And after that much coffee, I really didn’t get hungry until lunch time.

Then something happened. I turned 40 and my body started rebelling against all the abuse I had put it through for 40 years. I started to develop some health problems, some of them being major health problems.

I knew I had to change my ways and develop a healthier lifestyle.  Now I didn’t cut out coffee all together. I love my Keurig B40 and will always have my  cup of joe in the morning. But I cut it down to 1 cup and I now usually have a healthy breakfast. And I always have fresh juice. Some mornings, all I have is the juice and coffee but I’m still usually full until lunch time. Other mornings, in particular the mornings when I have my grand daughter with me (about 4 mornings a week), I’ll make breakfast too.

I want to share with you some of my favorite breakfasts and juice recipes.

First the Juices

One thing I do that I don’t know if other people do. I add a little of the pulp that the juicer has excreted back to the juice just so I get the fiber into my diet.

Some mornings I make fruit juice because my grand daughter prefers that to vegetable or mixed vegetable/fruit juice. My favorites are Asian Pear, kiwi, and apple. But I have a large assortment of fruit and just throw whatever fruit I fancy that day. I use a lot of berries such as strawberries, blueberries and blackberries.

When I make vegetable juice, I use carrots, celery, and tomatoes. Sometimes I add apples too. Again, I often throw in whatever I have available and what I feel like drinking that day.

A little tip, I save some of the pulp to add to muffins, meat loaf and spaghetti sauce. It adds fiber, taste and vitamins.

Our Favorite Breakfasts

I’ll tell you that my grand daughter loves these breakfasts . I figure if she likes them, most kids will like them too. So if you are having trouble getting your kids away from the Captain Crunch, try some of these breakfast recipes.


I make Quick cook oatmeal (not instant) on the stove  and add raisins, walnuts, and sliced bananas to it. I usually put the fruits and nuts in a bowl and let my grand daughter add what she wants to it. Sometimes I’ll put out strawberries, blueberries and chopped apples too.

Yogurt Parfait

I put a little plain yogurt in the bottom of a parfait glass. I have to confess if it’s for me, I don’t add any sweeteners but my grand daughter doesn’t like plain yogurt so I will add a little stevia or honey to sweeten it for her. I layer the yogurt and other ingredients. After the yogurt, I then add a few sliced strawberries, more yogurt, some grapenuts mixed with ground flax seed, more yogurt, blueberries, yogurt and top with a few almonds or walnuts. Yummy!

Breakfast Smoothie

Blend in a blender until smooth:

8 oz. skim milk (I use skim milk for myself but my daughter is a little lactose intolerant so I use almond milk for her)

1 cup frozen berries (strawberry, blueberries, whatever)

1 Tablespoon ground flax seed

1 Tablespoon coconut oil

1/2 orange

1 scoop protein powder

I have to point out that I often add some of the pulp from the morning juicing to the blender.


I cook 1 cup kasha (or buckwheat) on the stove with 3/4 cup milk. When it’s done, I add 1/3 c. dried fruit like apricots or prunes, 1 tablespoon sunflower seeds and 1 tablespoon protein powder

Breakfast Taco

Scramble an egg and put it in a corn tortilla. Add a few tablespoons of black beans, shredded cheese and salsa to taste.

I hope you try some of my recipes and enjoy them as much as we do. They are simple and easy but effective. My health has improved so much over the last 10 years and I have to contribute a large part of it to the raw juices I now consume everyday and the healthy meals I eat
